Mexican “molletes” have been a dish i grew up eating in Mexico. They are made differently all around Mexico and they are all delicious!
It is easy to make and very filling. Try them, you will not regret it!
2 Bolillo rolls
4 oz Refried beans
2 oz Chorizo
1/2 cup Red onion (Chopped)
2 oz Tomatoes (Chopped)
1 oz Queso fresco (Fresh cheese)
1/4 oz Cilantro (Chopped)
TT Sliced avocado (optional)
- Pre-heat oven at 350F.
- In a pan, place the chorizo and let it cook for about 5 minutes. Once done, place it on the side and let it cool.
- Slice the bread in half horizontal and spread the refried beans on the top. Place it on a baking pan. Bake for 10 minutes or until the sides are golden.
- Top them with onion, tomato, cilantro, cheese, cilantro and avocado.
